Here's a great Rum Cake recipe for the adults at the holiday parties. Easy and tasty

Bacardi Rum Cake

Prep Time: 25 minutes
Total Time: 25 minutes
Yield: 12 to 16 servings
Ingredients:
---Cake---
1 cup chopped, toasted pecans or walnuts
1 18-1/2 ounce yellow cake mix
1 1-3/4 ounce (4-serving size) instant vanilla pudding mix
4 eggs
1/2 cup cold milk*
1/2 cup vegetable oil
1/2 cup Bacardi dark rum
---Glaze---
1/2 cup butter
1/4 cup water
1 cup sugar
1/2 cup Bacardi dark rum

Preparation:
Cake: Preheat oven to 325 degrees F. Grease and flour 12-cup Bundt pan. Sprinkle nuts on bottom of pan. Combine all cake ingredients. Beat for 2 minutes on high with electric mixer. Pour into prepared pan. Bake for 1 hour. Cool in pan. Invert on serving plate. Prick top with fork. Drizzle glaze over top of Bacardi Rum Cake. Use brush or spoon to put extra dripping back on cake.

Glaze: Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Note: The rum will cause steam. Be careful not to burn yourself.

*I use milk for added nutritional value. Water may be used instead

Okay, time for a new recipe. The best chicken picatta recipe that I have every had. Pound out your chicken breasts, dredge in egg wash then in flour that has been seasoned with paprika and garlic powder. Fry until browned but not cooked through in butter. Cover with chicken broth or stock and simmer covered until cooked through. Squeeze lemon over top and serve....

Serve with rice or noodle and fresh broccoli

I took some left over chicken and made chicken enchiladas, yellow rice (I add a little corn) and refried beans.... was great with an avacado mashed with a little sour cream for a smooth guacamole, shredded lettuce and diced tomato! It was great - and I'm new to Mexican cooking!

Today I got home starving and bolied some linguine in the pot while in the frypan I tossed two semi-mild peppers and two anchovies fillets, half avocado and plenty of parsley, tossed the linguine in the pan and placed them in a bowl with a handful or parmigiano. Washed it down with a James Boag premiumTasmanian beer. Quick and tasty meal
